Fuzhou cuisine in the winter solstice is all related to rice. making “Mishi”, which means reunion and luck turns. The whole family sat around and made Mishi, singing happily.
The “Mishi” in Wenru Square invites many people who live and work in 3 Lanes and 7 Alleys . It uses two different processes. White original dough, one is glutinous rice flour commonly used in ordinary families, which is kneaded into white rice dough after adding water; The other one uses rice balls for glutinous rice cake, which is more chewy.
Guo Kewen, chairman of Wenru Fujian Restaurant, said that the day before the winter solstice, Fuzhou people began to make “Mishi” and shared it with their elders and relatives the next day, which is one of the main forms of filial piety and neighborhood harmony in Fu culture. And brewing wine is related to farming time. On the winter solstice, Fuzhou people who have no farm work put their energy into brewing. At the activities of the winter solstice, four links were displayed: steaming glutinous rice, putting wine, putting glutinous rice and sealing the altar.
In the past sixteen years, Wenru No.9, which has been focusing on traditional Fuzhou official dishes, has passed on the winter solstice activities. The descendants of Lin Zexu, Shen Baozhen and “Dianguang Liu” all participated in the activities of the winter solstice, and gathered here to exchange ideas. Guo Kewen said that in the face of market challenges in the catering industry, inheritance and defense are the way for enterprises to survive. Wenru No.9 is the only Michelin-starred Fujian restaurant in Fuzhou, and the company intends to open up overseas markets. At present, it has plans to jointly open a store in Dubai, United Arab Emirates. He hopes that diners all over the world can taste the most authentic and authentic Fuzhou flavor.
